Happy Birthday Dad!

Well, Sarah has joined the tradition of making a Christmas cake (English Fruit cake) for Dad for his birthday. On Simon's birthday, the girls and I weighed (yes weighed) all the ingredients for two fruit cakes. Not sure which was slower the baking, the weighing, or the girls figuring out all the things you call weigh in the kitchen to see what balances. So, needless to say t it took the whole day to mix and then slowly bake the cakes.
This will be our 5th year that, Rachel and I have made the Christmas cake on Simon’s birthday (October 6) and then frosted it with royal icing about a week before Christmas, which meant we made it but he didn’t eat it until Christmas.
A few years ago, he decided this was too good to wait until Christmas so he requested a birthday fruit cake in addition to the Christmas cake, (can’t really call it a Christmas cake, if he’s eating it in October.) So, now the tradition is two cakes made on his birthday and the job was even more special with Sarah joining the fun.
